Autumn Power Salad


This salad is the perfect way to get lots of good for you veggies (and fruits) in a tasty way. It is so simple and delicious that it can brighten up any menu and is festive enough to make holiday meals fun. This is especially delicious when topped with Drew’s Roasted Garlic and Peppercorn Dressing (totally unsolicited advice, I know, but a combination too good not to share). Also, while I purchased all of the salad fixings at Trader Joe’s, you can easily buy whole kale and Brussels sprouts and shave/shred them with a stand mixer attachment or food processor.
Autumn Power Salad 1 cup shaved Brussels sprouts 1 cup shredded kale 1 cup broccoli slaw 1/2 bulb fennel (halved lengthwise and thinly sliced) 4 Tablespoons dried cranberries 1/4 cup pomegranate seeds 1/4 cup pepitas (toasted pumpkin seeds) 1. Toss all ingredients in a bowl and serve immediately. It is really that easy.
