Pumpkin Eggnog Pancakes


With the holiday season here, there are so many delicious flavors and breakfast is no exception. These pancakes are so yummy, but have a hint of pumpkin and a dash of eggnog. Plus, these are so easy that you will have a scrumptious breakfast ready in a matter of minutes.
Pumpkin Eggnog Pancakes 1 1/2 cups flour 3 Tablespoons sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1/2 teaspoon nutmeg 3/4 cup pumpkin puree 2 Tablespoons maple syrup 1/4 cup mashed ripe banana 1 cup non-dairy eggnog 1 teaspoon vanilla extract 2 teaspoons vegetable oil 3 Tablespoons water 1. Preheat an electric griddle to 350 degrees. 2. Mix all of the dry ingredients together in one bowl, and all of the liquid ingredients in another. Slowly mix the liquid ingredients into the dry ones until there are no lumps and the batter is smooth (do not over-mix). 3. With a ladle, spoon 1/2 cup of batter and even it out on the griddle. Continue with all of the batter, and cook pancakes until the edges are golden and the pancakes are bubbly. Flip over, and cook until golden. 4. When ready to serve, top with maple syrup. Yum!
